Greek Red Onion Pie with Feta

Pastry Base: Lighter Pastry Dough

Filling:
4-5 red onions
2 tbsp butter
3 tbsp red wine vinegar
3 tbsp honey
200 g feta cheese
3 eggs
1.5 cup milk
dill
1 tsp salt

Sauté the thinly sliced onions in the butter for about 5 minutes. Make sure they don’t get brown. Season with vinegar and honey and cook gently for another 5 minutes. Lay the onions on the pastry. Add crumbled feta cheese.

Mix together the eggs, milk, dill and salt. Cover the onions with the mixture. Bake for 35-40 minutes at 350°F.
