Yield: 4 servings
4 medium unpeeled zucchini
3 eggs, beaten
1/4 cup flour
1/4 teaspoon garlic powder (optional)
1 teaspoon salt
1 onion, grated
Grate zucchini coarsely. Mix in next 5 ingredients. Fry by Tablespoons in
hot oiled skillet, turning once when golden brown. Arrange on platter and
top with soy sauce.

I’m impressed that there are no potatoes in this recipe. Too bad my kids won’t eat it. Sigh.
I make zucchini latkes every year for our family’s Chanukah party, and they get scarfed down pretty quickly. My recipe is very similar to yours, except that I add a bit of grated carrot to the mixture for extra color.

My dad makes something very similar: love this dish. We eat ours with sour-cream though.
