Autumn Stir-Fry

Ingredients for four people:
2 tbsp olive oil
2 red onions
1.5 cup basmati rice, white or brown
2 small zucchini, grated
2 carrots, grated
5/6 leaves white cabbage, shredded
a 3-egg omelet, shredded
(kosher certified) soy sauce, preferably Kikkoman Less Sodium

Cook the rice. Meanwhile fry the onions until slightly brown. Add cabbage and fry for a few minutes. Lower the heat. Then add zucchini and carrots and fry a little longer. Add rice, shredded omelet and soy sauce, stir for a minute or two and serve.
